Hawaiian Bread sandwiches

My sister Hope started making these little sandwiches with Hawaiian bread, roast beef, cheese & butter with garlic salt on top..  They are so yummy..  Hope cooks but she doesn't cook from scratch I guess I should say..  I love my sister and I don't want to discredit her cooking skills by any means..  She can cook, and has really come into her own in the kitchen here lately!  I am proud of her for trying new recipes.  She calls me and tells me about what she has been cooking..  Anyway, she started making these little sandwiches years ago..  I decided to make them with ham/ gouda cheese, turkey and cheddar a while back... Delicious!!  I have also made these with melted butter/ garlic salt/ mustard/ poppyseeds..  I think one of my friends from Martin makes them with the butter & mustard.. Really great, either way... Well yesterday I made these cute little sanwiches for my Kiwanis folks..  I melted butter with dijon honey mustard.  I am not sure what the melted butter does to these Hawaiian rolls when they bake, but wow it is gooey butter goodness..
If you haven't tried these, please do...  Sometimes they are hard to find, check Wal-Mart bakery section.  Kroger always carries these!!

Cherries Jubilee

My Great-Grandmother (Granny-Ann) always made this dessert... Layers of vanilla wafers, cherry pie filling & whipped cream.  I am not sure what she called this... She would make this for Sunday lunches, special occasions.  Everyone always enjoyed it, and it looks pretty in a trifle!  I decided I would make this for Kiwanis lunch tomorrow.  I will take a picture!!

What is this called???

Stinky boiled eggs

Do you ever wonder why your boiled eggs make your house smell??  Well I know how you can avoid this!!
Start with a pot with a lid.. add cold water and eggs, bring water to a boil.  Turn heat down and put lid on.  Get your timer out, set it for 10 minutes.  Get a bowl and fill with ice..  After the 10 minutes of simmering, take the eggs out and put into the ice bath.  Let them bathe until eggs are very cold/ chilled... Peel and enjoy without that yucky stink!!

Poppy Seed Chicken

2 cups cooked chicken or canned
1 large can cream of mushroom soup ( you can also use cream of chicken soup)
1 large container sour cream
2 tbsp. Greek seasoning

In a large bowl mix chicken, soup, sour cream & greek seasoning.  Pour into a 13x9 baking dish

Top with 2 sleeves butter crackers or saltine crackers.  Melt 2 sticks of butter, pour on top of crackers, sprinkle with poppy seeds..

Bake @ 350 degrees about 40- 45 minutes

Can opener

I thought about this tonight while making poppy seed chicken... Do you wash your can opener?  I do!  I guess I am just a weirdo.. but I wash it in the dishwasher.. not everytime I use it but when I think about it..
If you are like me and wash your can opener, do you notice sometimes it is hard to use and hurts your fingers?  I spray the wheel with cooking spray, works perfect everytime!!!

Broccoli Salad

My new favorite thing to munch on is :Broccoli Salad..  My grandmother always made a salad with lettuce, broccoli, cauliflower, red onion, bacon, cheese, frozen green peas... with a sweet dressing...  mayo & sugar..  This was always a favorite salad of mine when I was younger.  A couple of weeks ago I bought a broccoli salad mix from Costco.. and it was delicious..  broccoli , broccoli slaw, bacon, craisins, sunflower nuts and I think pine nuts.. It came with dressing that was pretty tasty, but I will just make my own dressing next time.. I have just been craving this salad.. now I have been buying broccoli just so I can make the sweet dressing and eat on herb salads..
I think there are several variations on broccoli salad.. I have had a broccoli salad with raisins.. I don't like the raisins/ broccoli salad at all...
If you have never tried this broccoli salad I am talking about please try it....
The dressing is :
1 cup Hellman's mayo
1/2 sugar
3 pinches salt, 3 pinch pepper (btw, I don't measure anything) LOL
You can google broccoli salad and get a gazillion different recipes...
