Grits toasts with mushroom, bacon and gouda... canapes?

Yummy grits start this dainty little appetizer off... Lots of work, but well worth every bite!  Grits are cooled and cut into small circles, then baked until crispy!  The topping is mushrooms, parmesan cheese, Real Hellman's mayo, cooked bacon, gouda cheese... then placed on top of the grits and back in the oven under the hot broiler until bubbly and brown!  YUM!  I made these for my Mom the other day!  She said she could eat all of them!!

BBQ Chicken Pizza

I can't remember if I have shared this.... If I have it is so great I have to talk about it again! LOL My husband and I are always looking for low cal-low fat ways to eat pizza!  I love this, duh we live in Memphis..  love BBQ anything.... I actually make my "easy chicken salad" for this pizza.. I use canned chicken, a little dash of Greek seasoning & Hellman's mayo..  I get the healthy tortillas that have vitamins, etc... top the tortilla with no. 7 Jack Daniels BBQ sauce, sprinkle a little low fat sharp cheddar cheese, kinda dot on the chicken salad, sprinkle a little garlic salt, top with more cheese. Bake at 375 for ten minutes!  Last night I decided to not worry about calories... I fried some shredded potatoes until they were super crispy, then put them on top!  Delicious!!

Basil Chicken

Darcy's godmother gave me a bunch of oregano, mint and basil..  I watched Paula Deen make Basil Chicken on an episode and thought this would be wonderful!  I always use my chicken cooker..  I used beer in the center with garlic salt, pepper and chopped basil..  I always spray my chicken with Pam, rub on garlic salt, pepper, and more basil..  Bake at 350 for about an hr, then turn it up to 400 for 30 min, then back down to 350 for another hour!

Memorial Day cupcakes

I saw these darling cupcakes on Martha Stewarts website & just had to try this...  I used Graham crackers, and ground them very fine in my coffee grinder!  It worked perfect...  First I iced them in Vanilla Buttercream, then spooned the cracker mixture on top!
